10-hour Braised Beef Short Ribs with roasted sweet potato, charred cabbage dressed with balsamic vinaigrette

FOURTH COURSE
Warm Brie with toasted brioche, figs, crispy barley and lemon sabayon

FIFTH COURSE
Frozen Lemon Curd with macerated cumquats, lemon meringue, vanilla and star anise cream, finished with orange bitters
Served with assorted Liquore, Limoncello and Cafe

After developing cocktail programs in international hotels, Nick Barlow turned to what is now his passion – wine, while working for the Rockpool Group for 6 years. On finishing his tenure he applied his hand to building Riedel in the On Premise on the East Coast states, before joining 100 Proof as the state Wine Specialist for NSW. Nick has a deep appreciation for the wines of Italy, but more importantly, the food from the multitude of historic Italian regions.
